So I think this is my husband's new favorite dish. And I will admit I was extremely hesitant about cooking this but it came out so delicious !!
After searching for a recipe I found a cooking method that intrigued me. I used a 1lb pork tenderloin. Follow along below
1. Preheat oven to 550 degrees.
2.Season meat with salt and pepper
3. Place any rub you would like on meat. ( I chose jerk seasoning rub)
4. Place meat on cookie sheet uncovered and place on lower rack of oven
5. TURN OFF OVEN AFTER PLACING MEAT IN (Yeah this is the part that shocked me)
6. Leave pork in oven for 60-75min DO NOT OPEN OVEN
7. Take pork out and let rest for 5-7 min. Do not cut into it. Gives juices a chance to redistribute
I left my roast in for 75 min because pink centers scare me :-\
The roast was super tender and flavorful. Try it and let me know what you think
